This hasn't reached the iOS app yet. The web app has it today, in any browser.
Step by step
Pick the app you're using
The web app and the mobile app don't always work the same way, so each has its own instructions.
In the toolbar, click My Maps.
On the shared map's row, click Edit.
If you have not shared it yet, click Share.
Scroll to Link controls and find Password.
Type a password into the box and click Add password.
Viewers now have to enter it before the map loads.

On your phone
The mobile app cannot set a share password yet, but it does ask for the password when you open a protected map.
